About Us

Trash Collective is a drinks consulting and educational resource for bartenders and bar owners. We create and execute menus from concept to cocktail with a focus on bartender technique, efficient systems and tighter operations. We started with sustainability, and continue to weave that through everything we do, but have expanded our reach and focus to help the bar industry level up, from innovation, to training to cocktails themselves. 

 

Originally formed in 2016 as anti-waste bartender education platform and touring pop-up 'Trash Tiki', pioneered the connection of sustainability to the bar industry. We've grown up, in a sense, what started as a free recipe-focussed blog has evolved to encompass bar and brand creative concepts, educational talks and bartender training programs, alongside continuing to be at. the forefront of sustainable innovations globally.

Ramage has over 17 years experience in the hospitality business, ranging from educator, entrepreneur, sommelier and bartender.

She is the founder of the Trash Collective, among many other projects including Supernova Ballroom (cocktail bar), Dolly Trolley Drinks, pop-up Black Lagoon and the original Trash (Tiki), alongside co-founder, Iain Griffiths. Trash started as an online recipe platform that reused common cocktail waste ingredients and quickly became a global pop-up touring over 14 countries and who's recipes have influenced bars and bartenders around the globe. 

Kelsey has put together cocktail menu's for some of the world's best chefs, leading spirits brands and venues. Some of her projects include working with Blue Hill's Chef Dan Barber at WastED London, a 6 week long pop-up meant to change the way we think about food waste. She has put together drinks programs for multi-outlet hotel, the Curtain in London, and has consulted on sustainability and drinks strategy for brands such as Absolut, Pernod Ricard, Earl's Restaurants and Discarded Vermouth to name a few.
